PACAMARA | The art of El Salvador's coffee innovators

Coffee has woven its way into the heart and soul of El Salvador, becoming an integral part of its history, culture, and economy. In the early 19th century when coffee made its grand entrance into El Salvador. It was an opportune time, as the country's fertile volcanic soils and ideal climate provided the perfect conditions for cultivating this precious bean. farmers embraced coffee cultivation, transforming the landscape and setting the stage for an industry that would shape the nation's destiny. El Salvador's coffee industry flourished throughout the 19th and 20th centuries, vast coffee farms stretched across the hillsides. Wealth flowed into the country as coffee became its primary export, by the 1970s, El Salvador was the world’s 4th largest coffee producer. Fuelling economic growth and prosperity. 


In the mid-20th century, a group of visionary coffee researchers and farmers embarked on a quest to create a coffee variety that would embody the very best qualities of its parent plants. The Pacamara coffee varietal is a creation of the Salvadoran Institute for Coffee Research (ISIC) back in 1958, which resulted from the crossing of Pacas and the Maragogipe varietals. It took approximately 30 years of careful scientific research to create the Pacamara varietal.  It was released to coffee producers in the late 1980’s.


The birth of Pacamara was only the beginning of a long journey. Coffee farmers meticulously nurtured the Pacamara seedlings, carefully selecting the strongest and healthiest plants. They dedicated themselves to the art of cultivation, providing the ideal conditions for the Pacamara to thrive. Patience and expertise were paramount at that time. As the Pacamara trees matured, their remarkable attributes began to unfold. Starting from its coffee cherries that adorned their branches were colossal, almost twice the size of traditional beans. To its bright acidity, a luscious mouthfeel, and a complexity that danced on the palate. Exotic fruits burst forth, followed by delicate floral undertones and hints of sweetness and cocoa. 


The journey of coffee in El Salvador is a testament to the human spirit and the extraordinary possibilities that lie within a simple bean. Today, Pacamara stands as a testament to the ingenuity and dedication of El Salvador's coffee pioneers, like Mauricio and his father.
