When Ibrahim Al Shalawi set out to source this latest release, he wasn’t just looking for a quality bean, he was looking for a specific sensory atributes.
High atop the rugged slopes of Kenya, at a staggering altitude of 1800 MASL, the air is thin, the soil is rich, and the coffee cherries mature slowly, packing themselves with complex sugars. This is where the story of White Mountain begins.
Most coffee is grown، Ibrahim’s was engineered for excellence. To elevate this harvest from "great" to "extraordinary," Ibrahim employed a precise Anaerobic Fermentation process. By sealing the cherries in a completely oxygen-free environment, he allowed the natural microbes to work their magic in a controlled, pressurized state.
The result? An intense, crystalline sweetness that defies the traditional Kenyan profile.
