For this exceptional lot, They selected only the ripest striped bourbon drupes. They underwent a meticulous fermentation process in a controlled anaerobic environment, followed by pulping. To enhance the flavor, the beans in mucilage were then fermented in barrels with native bacteria and strains of special yeast, ensuring a distinctive and rich profile.
12 days raised beds sun dryer, followed by an essential 1,5 months stabilization phase in a meticulously controlled temperature environment, ensuring optimal conditions for preserving quality and enhancing durability.
